Greek Scramble

Good Morning!

Today I threw together a sort of greek scramble and thought I would share it with you!

Ingredients:

2 eggs / chcken / mushrooms / kalamata olives / butter / pepperoncinis / feta cheese / salt  / pepper

Directions

Place a medium saucepan on medium heat and add 1/2 TBSP of butter

Once melted add mushrooms and let cook for about 5 minutes, stir occasionally

In a bowl crack two eggs and whisk with about 2 TBSP of water

Add Chicken (I used a rotisserie chicken from Costco – I LOVE those!) and mix together

Pour the eggs and chicken into the pan with the mushrooms and add the olives and pepperoncinis salt and pepper

Allow time to cook ~ 5 minutes and scramble/ stir as needed

Once cooked, plate and sprinkle a little feta cheese (or to stay healthier, skip the cheese) and enjoy 🙂
