Day 14 – Breakfast Crock Pot Casserole

It was the night before Christmas and all through the house not a creature was stirring, not even a mouse…well I don’t know about you but I would rather not have a mouse stirring in my kitchen! But if you use this recipe the night before Christmas you won’t have to stir anything on Christmas morning for breakfast! That’s right this is an overnight breakfast casserole that is perfect for Christmas morning AND it cooks in the crock pot while you sleep and Santa sneaks down the chimney.

INGREDIENTS

1 dozen eggs

1 bag of thawed hash browns

1 lb of bacon (or sausage) or if you’re a true carnivore both! (cooked and cubed)

1 onion diced

2 cups of cheese (your choice but  I find shredded cheddar works best)

–> OPTIONAL: add some veggies or other of your favorite omelet ingredients and it will be delicious

DIRECTIONS

Cook and cube the bacon or sausage or ham or whatever meat you decide to put in your breakfast casserole (or skip this step if you are a veggie-tarian)

Dice your onion and quickly brown it (this means have a pan with decently hot oil in it throw the onions in and run! jokes don’t really fun but be careful cause the oil might splatter and it hurts when it hits you….let the onions turn slightly brown on the edges and remove from heat and oil)

“Scramble” all 12 eggs aka crack them all and whisk them added a little water to your mix

Combine all the ingredients in your crock pot, turn on low and go to bed 🙂
