Day 15 – Sweet Potato Casserole

Sweet Potato Casserole

3 cups of mashed sweet potatoes

(boil the sweet potatoes with skin on until they are tender~poke them with a fork~ skin will almost fall off the potato)

1/2 cup of evaporated milk
1/2 cup sugar
1/4 cup of butter
2 eggs
1/2 tsp vanilla
1/2 tsp salt

 

Mash potatoes.  Add remaining ingredients and mix well.  Pour into a 13 x 9 baking dish. 

Make topping:

1/4 cup of butter 1/2 cup of brown sugar 1/3 cup of flour~~or whatever flour replacement you want 1 cup chopped pecans

****I usually double the topping.

Mix topping together with a fork and sprinkle topping over potatoes.  Bake at 350 for 35 to 40 minutes.
