This is one of my favorite RIDICULOUSLY easy recipes because it uses my secret kitchen weapon: THE CROCKPOT.
I think at this point you all know of my love affair with the magical crock pot, well after you see how simple it is to make a pot roast in it that will taste like you’ve been slaving all day in the kitchen, you will love it even more.
I think my favorite part of this recipe is when you come home after it has been cooking all day and you just smell how wonderful it is. One of my favorite memories is coming home after a long day of class/work and walking into my grandmothers house and just being overwhelmed by the fantastic aroma of pot roast, then practically making myself sick by eating so much of it. LOL.
Chuck roast / 2-3 large yellow onions / carrots / 3-4 peeled white or gold potatoes / 1 head of cauliflower / salt and pepper
Take your chuck roast (defrosted or not) and place it in the crock pot.
Quarter the onions and lay them around the roast.
Half your potatoes and arrange them in the crock pot as well.
Season heavily with salt and pepper.
Turn on your crockpot to low and let sit for about 4-6 hours.
Add your carrots and cauliflower about 1 hour prior to serving.
**In these photos I did not add potatoes, I simply used carrots, onions and cauliflower.
